Valentine Chocolate Strawberry Banana Cupcakes

Ingredients:

  • 3 ripe bananas, mashed

  • 4 Tbsp melted butter

  • 1/4 cup Greek yogurt or sour cream

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 egg

  • 1 tsp vanilla

  • 1 1/4 cups flour

  • 1/3 cup cocoa powder

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • Pinch salt

  • 1/2 cup mini chocolate chips

  • 1/3 cup finely chopped strawberries

Instructions:

  • Preheat oven to 350°F and line a muffin tin.

  • Mash bananas; stir in butter, yogurt, sugars, egg, vanilla. 3. Whisk dry ingredients and fold into wet.

  • Add chips and strawberries.

  • Fill liners 3/4 full and top with a strawberry slice.

  • Bake 18–22 minutes. Cool before serving.
