Greek Yogurt Waffles

Whether you're hosting brunch or enjoying a slow morning, this recipe is a simple and fun way to start the day!

Ingredients:

  • ½ cup whole wheat flour

  • ½ cup all purpose flour

  • 2 teaspoons baking powder

  • ¼ teaspoon cinnamon

  • ¼ teaspoon kosher salt

  • 1 large Clover Sonoma egg

  • ¾ cup Clover Sonoma milk

  • ½ cup Clover Sonoma Greek yogurt

  • 1 teaspoon white wine vinegar (optional but recommended)

  • 1 tablespoon maple syrup or honey

  • 2 tablespoons avocado or olive oil

METHOD:

1. In a medium bowl, whisk together the whole wheat flour, all purpose flour, baking powder, cinnamon, and kosher salt.

2. In a separate bowl, whisk the egg, then whisk in the milk, Greek yogurt, white wine vinegar, maple syrup, and oil.

3. Stir the wet ingredients into the dry ingredients. If the batter is too thick, stir in another splash of milk (the consistency of each yogurt brand varies).

4. Lightly oil waffle-maker and wipe off extra grease with a paper towel.

5. Heat the skillet to medium low heat.

6. Pour the batter into pan. Cook the wafles until the bubbles pop on the top and the bottoms are golden. Then flip them and cook until done.

7. Repeat with the remaining batter.

8. Serve immediately with maple syrup.

Play into the July 4th theme with red (strawberries), white (whipped cream), and blue (blueberries) for a festive twist!
