Grilled Apricot & Whipped Ricotta Tartine

This tartine feels elegant enough for entertaining, yet approachable enough for an easy afternoon lunch paired with a chilled glass of rosé.

Ingredients

  • 6–8 ripe California apricots, halved and pitted

  • 4 thick slices rustic sourdough or country bread

  • 3/4 cup whole milk ricotta

  • 1 small shallot, thinly sliced

  • 1 lemon (zest + juice)

  • Fresh rosemary sprigs

  • Extra virgin olive oil

  • Butter for grilling bread

  • Flaky sea salt

  • Fresh cracked pepper

  • Hot honey or chili-infused honey

  • Optional: microgreens, pistachios, or fresh basil for garnish

Instructions:

  1. Caramelize the Apricots - Heat a cast iron skillet over medium heat with a drizzle of olive oil. Place apricots cut-side down into the pan and cook until lightly caramelized and softened, about 4–5 minutes. Add rosemary sprigs while cooking to infuse the fruit with flavor. Remove from heat and set aside.

  2. In a separate skillet, cook the shallots low and slow in olive oil until golden and jammy, about 10–12 minutes. Season lightly with salt.

  3. Butter the bread lightly and grill until golden and crisp on the outside while still tender inside.

  4. Whip the Ricotta - In a bowl, combine ricotta with lemon zest, a squeeze of fresh lemon juice, flaky salt, and cracked pepper. Whip until light and creamy.

  5. Assemble the Tartines - Spread a generous layer of whipped ricotta onto each slice of grilled bread. Top with caramelized apricots and golden shallots.

  6. Finish with: a drizzle of hot honey, fresh rosemary or basil, flaky sea salt

  7. Serve immediately.
