Serves: 1 person at 8 oz. portion

INGREDIENTS

  • 1/2 Lb Halibut

SAUCE:

  • 2/3 cups Onion

  • 2/3 cup Garlic

  • 1 Tbsp Fresh Turmeric

  • 1 cup Rice Wine Vinegar

  • 1 tsp Fish Sauce

  • 1/4 cup Sugar

  • Salt and pepper to taste

VEGETABLES:

  • 1 Head of Little Gem Lettuce

GARNISH:

  • 1 cup Soy Sauce

  • 1/2 cup Sugar

  • Sesame Seeds

METHOD:

Instructions for Eskabeche:

  1. To make the sauce lightly sauté onions and garlic in a pan.

  2. When garlic and onion are translucent add grated turmeric, rice wine vinegar, fish sauce, and sugar and simmer for 5 minutes.

  3. Adjust to taste with a bit of water, if needed. Remove from heat and set aside.

  4. Lightly grill lettuce in a cast iron pan, then add sauce and bring to a simmer.

  5. Next add Halibut to sauce mixture cover and steam until cooked throughout.

  6. Finish with salt and pepper to taste.
