Rosemary Lemon Rack of Lamb

INGREDIENTS

  • 2 full racks of lamb

  • 1/4 cup chopped fresh rosemary and thyme

  • 3 Limoneira lemons (zest only)

  • 1 Tbs. chopped garlic

  • 1/4 cup olive oil

METHOD:

  1. Preheat oven to 450 degrees.

  2. Set aside lamb.

  3. Mix all other ingredients then rub rack of lamb.

  4. Pan sear (3 mins each side) then put in the oven.

  5. Bake for 14 minutes

  6. Enjoy!
