Key Lime & Buttermilk Chess Pie

INGREDIENTS

  • 2 eggs, whisked

  • 1 cup granulated sugar

  • 1 ½ tsp cornmeal

  • 1 ½ tsp flour

  • Pinch salt

  • 1 oz unsalted butter, melted & cooled

  • 2 Tbsp buttermilk

  • 2 Tbsp key lime juice

  • 1 ½ Tbsp apple cider vinegar

  • 1 ½ tsp key lime zest (from approx. 6 key limes)

  • 1 tsp vanilla

METHOD:

  1. In a large bowl, whisk the eggs, sugar, cornmeal and flour together until well combined.

  2. Add in all the remaining ingredients until fully combined

  3. Pour into pie shell and bake at 325 degrees for 20 mins.

  4. Rotate and cook at 300 degrees for 20-30 mins, or until firm and slightly brown
