Cape Water Flounder

Serves: 2 people

INGREDIENTS

  • 7 Tb Butter

  • 2 Filets Flounder

  • 2 Tbsp Garlic

  • 2 Tbsp Red Wine Vinegar

  • 2 Tbsp Tomatoes

  • 2 Tbsp Lemon Juice

  • 2 Tbsp Shallots 

  • 1/4 Cup Micro Celery

  • 1/2 Cup White Asparagus

  • 1/2 Cup Snow Peas

  • 1/2 Cup carrots

  • Chopped Fresh Herbs

  • Salt & Pepper

METHOD:

INSTRUCTIONS FOR FLOUNDER:

  1. Season flounder with salt & pepper then lightly dredge in flour. 

  2. Sear in clarified butter over medium heat.  

  3. Remove when desired doneness.

INSTRUCTIONS FOR VINAGRETTE:

  1. Toast almonds and add butter.  

  2. When butter begins to brown, add shallots, garlic, red wine vinegar and tomatoes. 

  3. Add salt and pepepr to taste and set aside. 


INSTRUCTIONS FOR SALAD:

  1. Mix celery, asparagas, snow peas and carrots.  

  2. Add fresh chopped herbs and 2 Tbsp of Vinaigrette. 

  3. Mix and reserve for plating. 

INSTRUCTIONS FOR PLATING:

  1. Place Flounder on the plate and salad on top.  

  2. Add more vinaigrette as desired.
