Bourbon Raisin Balls

Serves: 4 people
1 1/2 Cups Toasted Pecans
1 1/4 Cups Cookie Crumbs
1 Cup Golden Raisins
1/2 Cup Confectioner’s Sugar
2 Tbsp Cocoa Powder
2 Tbsp Honey
1/4 Cup Bourbon
1 Cup Toasted Chopped Pecans for rolling
Toast pecans at 350F for about 5-7 minutes, cool.
Grind pecans, cookie crumbs, confectioner’s sugar and cocoa powder in a food processor until fine.
Add honey and bourbon and mix. Finally add raisins and mix until thoroughly combined.
Let rest overnight in the refrigerator.
Use an ice cream scoop to form balls, roll by hand into a round shape.
Toss in toasted chopped pecans.
