Sauteed Fresh Asparagus |

Ingredients
Serves 2 1 Bunch Delta asparagus 1 Clove garlic, chopped Fresh basil, chopped 1 Lemon 1 Bunch green onions, chopped Heavy Cream 1 Cup Polenta 5 Cups chicken stock Shaved parmesan cheese Extra virgin olive oil Salt and Pepper |
Cooking Instructions
Polenta: Cook polenta in the chicken stock. Season with salt and pepper. When thickened pour polenta into a pan and chill for 2 hours. Warm polenta just before asparagus is finished. Asparagus: Sautee chopped garlic in a small pan with olive oil. Add add cut asparagus adding a little cream until desired thickness. Add green onions and chopped basil. Simmer for 2 minutes then add lemon juice, salt and pepper. Dish: Warm Polenta. Place servings on plates and top with asparagus and sauce. Top with parmesan cheese and lemon zest. |
