Lamb Burgers
Recipe Courtesy of Executive Chef Janine Falvo, Carneros Bistro and Wine Bar


1 Lb Ground Lamb
1 Each Onion, minced
2 Each Garlic Cloves, minced
½ Cup Kalamata Olives, sliced
Salt and Pepper, to taste

Aioli:
3 Each Egg Yolks
1 Cup Olive Oil
2 Each Garlic Cloves
1 Lemon, juiced
2 Tbsp Smoked Paprika
Salt and Pepper, to taste


Combine all ingredients until mixed thoroughly. Form Patties.

In a food processor, add egg yolks and garlic cloves and blend on high until eggs are thick to ribbon-like consistency. Slowly add oil until emulsified. Add paprika, lemon juice and season with salt and pepper.

Cook burgers on a hot grill to desired temperature. Melt cheese, add Paprika aioli, Arugula, Tomato, and caramelized onions. Serve on Onion Roll.
