Harvest Vegetable Panini

Serves 4

2 Tbsp Olive Oil, plus more for brushing onto bread
1 Each Zucchini, cut lengthwise into 1/4-inch slices
2 Each Yellow Squash, cut lengthwise into 1/4-inch slices
1 Each Onion, cut crosswise into 1/4-inch slices
3 Each Roma Tomatoes, stem removed and cut lengthwise into 1/4-inch slices salt and pepper
8 Slices Earthgrain Whole Wheat Bread
4 Oz Sharp Cheddar Cheese, sliced


Place the vegetables in a large bowl. Drizzle one tablespoon olive oil over the vegetables, then season with salt and pepper. Toss until all the vegetables are coated with the oil.

Heat a grill pan or frying over medium high heat. In batches, grill the vegetables until soft, about 3 minutes on each side. Set vegetables aside.

Brush one side of each bread slice with olive oil. Lay the slices, oiled side down, on a clean work surface. For each sandwich, layer the different vegetables onto one piece of the bread, then top with cheese. Top with the other bread slice, oiled side up. Repeat until all sandwiches are assembled.

Grill each sandwich over medium heat until golden and the cheese is melted, about 2 minutes per side. Slice in half and serve immediately.
