Harbinger Salad

1 Container Cottage Cheese, drained
2 Heirloom Tomatoes, mixed colors
1 Green Bell Pepper, diced
3 Scallions, finely sliced
Kosher Salt and freshly ground, pepper to taste


Drain cottage cheese in fine strainer or colander until curds are dry. Stir in tomatoes, pepper, scallions, salt, and pepper. Refrigerate for two hours and stir again to remoisten mixture. Add a last grind of fresh black pepper.
