Romaine Hearts and Local Strawberries, Roasted Pistachios and Marinated Feta Cheese and Black Pepper

Serves 6

1 Cup Extra Virgin Olive Oil
1 Tspn Dijon
2 Lbs Strawberries, fresh and local
1 Tspn Red Vinegar
3 Oz Fresh Greek Feta
2 Oz Pistachios
4 Each Heads of Fresh Hearts of Romaine
1 Oz Crushed Black Pepper
1 Each Chives Bundle 
Salt and Black Pepper, to taste
Mustard, to taste
Fresh Basil


Clean and slice 1 lb. of fresh strawberries. Put them in Vita mix and blend by adding olive oil, salt, pepper and mustard; add vinegar to taste. Let the vinaigrette rest. Wash the lettuce leaves and dry well. Slice the rest of the strawberries and season with black pepper, olive oil, and a little salt. Dress the lettuce leaves with vinaigrette and place them onto a nice plate. Add sliced strawberries and fresh marinated feta. Garnish with Chopped Chives and Pistachios. Serve!
