Stir-Fried Chinese Broccoli with Garlic and Black Beans

Serves 2

18 Each Young Chinese Broccoli
2 Tbsp Fresh Garlic, minced
2 Tbsp Fresh Ginger, minced
2 Tbsp Oyster Sauce
1/4 Cup Chinese Fermented Black Beans, minced
2 Tbsp Sesame Oil
6 Each Chinese Parsley Sprigs


Bring a large saucepan filled with water to a boil, and add salt to taste.  Add the Chinese broccoli and cook for about 30 seconds. Remove from the boiling water and place the broccoli in a water bath containing ice cubes. Remove from the water and reserve on the side on a paper towel.  In a large wok or skillet, add the oil over high heat. When it is almost smoking add the minced garlic, minced black beans and minced ginger. Stir these ingredients until they release their fragrance (about 10 second.)  Add the broccoli and sauté until warm, about 2 minutes. Add the oyster sauce, the chopped Chinese parsley and add to the broccoli. Stir well and serve immediately.
