Ingredients
Serves 4
10 Oz Asparagus, cleaned & trimmed
2 Tspn Olive Oil
1/8 Tspn Thyme
2 Each Tomatoes, cut in half
1 Each Green Bell Pepper, cut in 1/2" strips
1 Each Red Bell Pepper, cut in 1/2" strips
1 Each Yellow Bell Pepper, cut in 1/2" strips
Salt and Pepper, to taste
Cooking Instructions
Heat grill to medium hot. Season the asparagus with olive oil, pepper, salt and thyme. Place diagonally on the grill and cook until grill marks are visible (4-5 minutes). Turn over and repeat. Season tomatoes and place on the grill, cut side down. Cook until grill marks are visible. Repeat for bell peppers.
Place asparagus on large plate and garnish with the additional grilled vegetables. Serve hot.
