Quick Blackberry Sauce for Poultry or Pork
Makes about 3/4 Cup
1 Tbs Cooking Oil
1/4 Cup Onions, minced
1/4 Tbs Rosemary, Thyme, or Sage, dried
1/3 Cup Red Wine
1/4 Cup Blackberry Seedless Jam
1/2 Cup Chicken Broth
1 Tbs Red Wine Vinegar
2 Tbs Butter, cold
Ground Pepper, to taste
Heat a medium frying pan over medium heat. Cook Onions in the Oil, until translucent, stirring often, about 5 minutes. Add the Wine, Jam, Chicken Broth, and Vinegar, and simmer until the mixture has reduced to a syrup consistency, about 10 minutes. Turn off the heat, and add Butter. Stir the mixture constantly until the Butter has melted. Season to taste with Salt and Ground Pepper.
Serve with cooked Poultry or Pork.
