6 Each Large Plums
1/2 Cup Honey
1/2 of a Vanilla Bean, scraped out
1/2 Lb Baker’s Cheese
Zest and Juice of 1 Lemon
Rinse and half the plums. Remove their pits. Cut each half into four wedges. Separate eggs and whip the whites. Combine yolks, honey and vanilla in mixer and whip until foamy. Add Baker’s cheese, lemon juice and zest and whip until incorporated. Carefully fold in the egg whites. Divide the batter into four ovenproof forms. Arrange the plum wedges on the batter in a circle resembling the numbers on a clock. Slightly pushing each wedge into the batter so they are halfway covered. Bake for about 15 minutes at 375º until browned.
