8 Each Plums, preferably Damsons
8 Each Sugar Cubes
1 Lb Flour
1 Lb Baker’s Cheese
Pinch of Salt
Sugarand Cinnamon, as desired
Melted Sweet Butter, as desired
Rinse plums and remove their pits without halving them. Stuff each plum with a sugar cube. Combine flour, Baker’s cheese, eggs and salt and knead into a smooth dough. Divide dough into eight portions and flatten each portion between the palms of your hand. Wrap the dough portions around each plum and roll in between the palms of your hands to smoothen. (The plums should only be covered by a small layer of dough.) Drop dumplings in boiling water and simmer for 20 minutes. Using a perforated spoon carefully remove the dumplings from the water. Sprinkle the dumplings with a mixture of sugar and cinnamon. Serve with melted butter.
