Mixed Greens with Watermelon, Pistachios, Goat Cheese and Balsamic Vinaigrette
1 Each (8 Oz) Bag of Ready Pac® Mixed Greens
4 Each Pieces of Watermelon, 1”x1”
1 Lb Roasted Pistachios, shelled
8 Oz Soft Goat Cheese
4 Oz Olive Oil
2 Oz Balsamic Vinegar
1/2 Oz Honey
Salt and Pepper, to taste
2 Each Garlic Cloves, minced
1 Each Shallot, minced
Combine mixed greens, and roasted pistachios with vinaigrette and divide evenly onto four salad plates. Slice goat cheese into 8 equal medallions, ¼" to ½" thick. Slice each 1" X 1" cube of watermelon into smaller cubes. Place two of the goat cheese medallions and the cubed watermelon on top of each of the four servings of salad. Serve.
Combine the balsamic vinegar, garlic, honey and shallots in a small bowl. Add the olive oil in a slow, steady stream while whisking constantly until all the oil is incorporated. Season with salt and pepper to taste and refrigerate in an airtight container until ready to use or up to 1 week.
