Italian Pepperoni Bites
Makes 32 Appetizers
1 Pkg (3.5 Oz) HormelÒ Sliced Pepperoni, chopped
1 Cup (4 Oz) Swiss Cheese, shredded
1 Each Tomato, chopped
3/4 Cup Mayonnaise
2 Tbsp Pesto, prepared
2 Pkgs (10 Oz each) Flaky Biscuits, refrigerated
Preheat oven to 350°F. In bowl, combine pepperoni, cheese, tomato, mayonnaise and pesto. Cut each biscuit in half. Place biscuit halves into greased miniature muffin cups, pressing gently to fit cups. Spoon 1 Tbsp of filling into each cup. Bake 20 to 25 minutes. Serve warm.
Serving Suggestion: Serve with a fresh spinach salad tossed with light balsamic vinaigrette dressing.
