Fresh Berry Vanilla Parfait
1 Cup Fresh Blueberries
1 Cup Fresh Raspberries
1 Cup Fresh Strawberries
1 Tspn Sugar
1/2 Cup Diamond Almonds, chopped
1/2 Gallon Dreyers Vanilla Ice Cream, softened
1 1/2 Cups Snapple Mango Madness Drink
4 Tbsp Sugar
1/2 Cup Whipping Cream, chilled
4 Each Mint Sprigs
Combine the blueberries and raspberries in a bowl. Cut the strawberries into quarters and toss with the sugar. Add the strawberries to the bowl with the blueberries and raspberries, and toss to combine. Set aside.
Combine the Snapple fruit drink and the sugar in a small sauté pan and bring to a simmer. Reduce the mixture until slightly thickened.
Combine the whipping cream, vanilla, and powdered sugar in a chilled bowl and whisk the mixture until the cream hold soft peaks.
To serve, place a small amount of the berry mixture in the bottom of a parfait glass. Top the berry mixture with a sprinkle of the chopped almonds. Finally, place a spoonful of the softened ice cream on top. Continue this process until the parfait glass is full. Top each dessert with a spoonful of the Snapple sauce and a dollop of the whipped cream. Garnish with a mint sprig.
