California Cobb and Herbed Blue Cheese Salad
1/2 Cup Heavy Cream
1 Cup Crumbled Blue Cheese
1/4 Cup ‘Soft’ Herbs (Chives, Thyme, Tarragon, etc.)
2 Each Heads of Butter Lettuce, sliced vertically every 1/2"
1/4 Cup Crisp Bacon, crumbled
1/4 Cup Roasted Turkey Breast, julienned
2 Each Eggs, hard-boiled and crumbled
1/4 Cup Black Olives, sliced
2 Each Vine-Ripened Tomatoes
1 Each Haas Avocado, diced
Salt and Pepper, to taste
Bring cream to boil, reduce heat and whisk in ½ cup blue cheese. Once melted, add herbs, season and set aside. For thinner dressing, add milk.
For serving, on large rectangular serving platter stagger sliced butter lettuce wedges and drizzle with dressing. In traditional cobb-style, place rows of bacon, turkey, hard-boiled egg, olives, tomatoes, avocado, and remaining ½ cup of blue cheese.
